Sweet Onion & Swiss Quiche
This recipe uses the microwave ... a real time saver ... and an energy saver in the summer months, keeps your kitchen a bit cooler. Quiche's are so easy and filling served with fresh fruit or a green salad, or perhaps cantaloupe or watermelon ... so very refreshing and cool!
Ingredients
- 3/4 C thinly sliced sweet onion … any of the nice onions at the market now
- 2 T butter
- 1 baked pie shell … or freshly made if you like
- 2 1/2 C shredded Swiss cheese
- 2 firm tomatoes sliced
- 1 (5 ounce can) evaporated milk
- 2 large eggs
- 1 t dried Italian seasoning
Instructions
- Combine the onion and butter in a 2-quart glass measure or casserole. Cover loosely (venting). Microwave on HIGH power 5 1/2 to 6 1/2 minutes. Remove the onion with a slotted spoon and spread in the pie shell. Sprinkle the cheese over the onions and arrange the tomato slices on top.
- To the onion cooking liquid remaining in the measuring cup, add the milk, eggs and Italian seasoning and beat well. Pour the milk mixture over the ingredients in the pie shell.
- Microwave on MEDIUM-HIGH power (70 percenuntil center is almost set, 10 to 12 minutes, rotating the dish midway through cooking (or let rotate if you have that ability in your microwave). Let stand 10 minutes before cutting.
