Fillet of Sole with Orange-Soy Sauce

I hear about people that don't eat fish ... I don't happen to be one of them! I absolutely love the fish we get from Mike at the Farmers Market. Mostly, I'm a purest when it comes to fish ... however, once in awhile I enjoy this orange & soy sauce, it's so sweet and delicious. Try serving it with couscous and fresh asparagus from the market.

Ingredients
  

  • 2 T butter
  • 1 C orange juice
  • 1/4 C sugar
  • 1/4 C vinegar your choice, Champagne or Sherry is delicious
  • 1/4 C Sherry
  • Zest of one medium orange
  • 2 T corn starch
  • 3 T lite soy sauce
  • 2 lbs sole fillets or any fillet of fish

Instructions
 

  • Melt butter in saucepan; add orange juice, sugar, vinegar, sherry and orange zest. Blend cornstarch and soy sauce; add to sauce. Cook, stirring constantly until clear and thickened; pour over fish fillets in baking dish. Bake at 350 degrees approximately 20 minutes, until fish flakes. Sauce makes 1 3/4 cups.
