Crock Pot - Gringo Carnitas

I call these my Gringo Carnitas, for those that are not able to eat some of the hotter varieties. When you make this, everyone can eat it (even the kids) ... and those that like "hot" can add either peppers or sauce to brighten up their taste buds. Pork shoulder is perfect for this dish, however, you could use beef or chicken just as easily.

Ingredients
  

  • 2 lbs pork shoulder cut into 1” cubes
  • 20 oz frozen French style green beans – or the same amount of fresh sliced
  • 1 medium onion diced
  • 1 small can pimientos chopped
  • 4-6 cloves garlic crushed
  • salt & pepper to taste

Instructions
 

  • Place green beans in Crock-Pot with onion, pimiento, salt & pepper; add the cubed pork. Cover & cook on Low for 7-9 hours.
