Chicken A La King
One of my favorite things as a kid growing up after the depression ... economical and wonderful! Give it a try, your kids will love it! All you need is a little side salad of cottage cheese and pears.
Ingredients
- 1/4 C chopped green pepper roasted & peeled
- 1/4 C chopped red sweet pepper roasted & peeled
- 1/4 C chopped onion
- 1 C sliced mushrooms
- 1/2 C butter
- 3 T flour
- 1/2 t salt
- 2 C half & half
- 3 C chopped, cooked chicken
- 2 hard-cooked eggs diced
- 3 egg yolks
- 1/2 t paprika
- 2 T sherry
- 1 T lemon juice
- 8 small frozen pastry shells or toast points
Instructions
- Saute peppers, onion and mushrooms in 4 tablespoons butter until tender; removed from pan. Blend flour and salt into butter in pan; add cream and cook, stirring constantly, until sauce thickens. Add chicken and hard-cooked eggs and heat. In small bowl, blend egg yolks, 4 tablespoons softened butter, and paprika; set aside. To chicken mixture, add vegetables, sherry, and lemon juice; heat then add egg mixture all at once. Stir to blend; remove from heat. Serve hot in chafing dish; spoon over pastries or toast. YUMMY!
