Method
- Working on a plastic cutting board, lay a tortilla, spread 1 of hummus or cream cheese evenly over tortilla. In the middle of the tortilla, top with the lettuce leaves, cucumber, carrot, apple and goat cheese, looking like a “log”. Folding both ends inside, starting at the bottom roll the tortilla upward until it resembles a “burrito”. Cut into two pieces and wrap with plastic wrap tightly and place in a lunch box. Continue with the remaining tortilla.
