Holiday Champagne Orange-Glazed Ham

Come fall and winter, the restaurant relaxes its pace considerably and, with the help of the whole family, serves up traditional Thanksgiving and Christmas fare to guests who come to the park to enjoy its fall beauty and play in the winter snow."   • 1 bone-in ham shank
  • whole cloves
  • 3/4 bottle Champagne
  • 24 oz orange juice concentrate
  • 5 C brown sugar
  • ground cloves to taste


  1. Score outside of ham into squares; insert whole clove into each square.
  2. Whisk remaining ingredients together to make glaze.
  3. Place ham in oven baking bag. Pour glaze over ham in bag. Seal bag and let sit overnight. Seal bag and let sit overnight, or longer if possible
  4. Bake at 325 degrees for 3.5 to 4 hours, or until ham’s internal temperature reaches 160 degrees. Carve ham and reserve drippings to pour over carved ham.
