I have made this relish for years! It's the epitome of relishes! Everyone wants the recipe, and everyone eats to their heart's content. I have given away soooooo many jars of this!! The recipe came to me via a dear old departed friend, Don Hanks ... and originally from another dear old departed friend, Bernie Talbot.
10 cups ground zucchini
4 cups ground onions
5 T. salt
2 1/2 cups white vinegar
1 T. cornstarch
2 T celery seed
2 red or green bell peppers
6 cups sugar – 4 cups if you like it less sweet
1 T. black pepper
In a large glass bowl, place the zucchini, onions and salt, and let set over night. The next morning drain, rinse with cool water, drain. Place all of the ingredients of the recipe in a large cooking pot. Bring to a strong simmer, cook for 10 minutes. Pack in hot sterilized jars, seal.
If you would like, you can also add whole garlic cloves which will give you a sweet and garlicky flavor – I add 5 or 6 large cloves (we like garlic).
This relish is great on the intended “hot dogs” – it is also super on a grilled cheese sandwich – or served on bruschetta with a great cheese – it literally has hundreds of ways to use it. Try it, you will love it!
