Glenda Castelli says ... "Here is a recipe Mei made up - an original. Used everything from the market including Krout Farm's Romanesco zucchini (the best for this recipe because of it's thick texture, and buttery flavor. Rick is at the market every Sunday and Thursday Nights."
3 ripe avocado, peeled and cut into medium dices
1 C. Farm-fresh cherry tomatoes, remove stem and cut into halves
1 C. small diced sweet onion
1 Serrano chili, seeded and cut into small dices
1 t. minced garlic
1 medium Romanesco zucchini, cut into small dice or minced
1/2 C. coarsely chopped cilantro leaves
juice of one lime, or more – to taste
salt and freshly ground black pepper to taste
1 bag of tortilla or pita chips
In a medium bowl, combine the avocado, cherry tomatoes, onion, chili, garlic, zucchini, cilantro and mix well with a spatula. Season with lime, salt and pepper to taste. Serve with your favorite chips or crackers.
Note: For a smoother texture, combine all ingredients in a food processor and pulverize for 5 seconds or until mixed well into a coarse texture.
