Sweet potatoes are such a great source of potassium. I've always loved Waldorf Salad ... this version with the sweet potatoes is scrumptious! Try this one for Thanksgiving, your family will be very surprised and happy! This recipe doubles and triples well for a feast.
2 C. sweet potatoes, cubed and cooked (roasted is wonderful)
1 C. diced celery
1 C. chopped apples
1/3 C. chopped walnuts (or your choice of nuts)
2 T. lemon juice
2 T. sugar
1/2 t. salt
1/4 C. mayonnaise
Combine potatoes, celery apples & walnuts in bowl. Mix lemon juice, sugar, salt and mayonnaise; pour over potato mixture. Toss lightly to incorporate.
