Ten-Minute Cranberry Sauce & Up-Side-Down Cake

4 Cups & 1 Cake

If you like pineapple upside down cake ... you're gonna love this one! it's beautiful, and so very tasty. Whenever I take this somewhere ... people want the recipe!

  • 1 pound (4 C.) cranberries
  • 2 C. water
  • 1 1/2 to 2 C. sugar

Boil sugar and water together for 5 minutes; add cranberries and boil without stirring for 5 minutes until all the berries “pop”. Remove from the fire and allow the sauce to set undisturbed until cool.

  • 2 C. cranberries
  • 2 C. sugar
  • 3 T. butter
  • 1/2 C. shortening (or butter, or margarine, or oil)
  • 2 eggs
  • 1 C. milk
  • 3 C. flour
  • 3 t. baking powder
  • 1 t. vanilla
  • 1/2 t. salt

Cream shortening, slowly add one cup sugar, beating well. Add eggs and vanilla. Add the sifted dry ingredients alternately with the milk, until just combined.

Melt butter with the other cup of sugar in a frying pan, add the cranberries. Pour in the cake mixture and bake in a 350 degree oven 45 – 50 minutes. Let cool somewhat and turn out (plate over frying pan and invert).
