Summer Market Salad

Serves 4

From Diana Shaw (Essential Vegetarian) ... "This salad is not the product of inspiration as much as total confusion. I can't shop rationally in the summertime, when I love everything in stock. So I buy it all and deal with the consequences back in the kitchen." I guess Diana loves Farmers Markets as much as we do!!!

Dressing:

  • 1/3 C. plus 2 T. vegetable broth
  • 2 T. Tahini (ground sesame seed paste)
  • 1 T. fresh lemon juice
  • 1 T. fruit vinegar
  • 1 scallion, including greens, minced
  • 6 C. Mesclun or lettuce of any kind

Vegetables (all or any combination)

  • 2 C. cherry tomatoes, halved if you like
  • 2 C. chopped asparagus, steamed but crisp
  • 2 C. sugar snap peas or snow peas, steamed but crisp
  • 1 1/2 C. cooked corn kernels
  • 2 C. halved or quartered, steamed new potatoes
  • red or white radishes, endive, peas, cucumbers, etc., etc., etc.

Whisk together the dressing ingredients.

In a large salad bowl, combine whatever veggies you’ve decided upon. Pour on the dressing, and fold it gently into the salad. Serve at room temperature, or chill and serve cold.
