Dressing:
1/3 C. plus 2 T. vegetable broth
2 T. Tahini (ground sesame seed paste)
1 T. fresh lemon juice
1 T. fruit vinegar
1 scallion, including greens, minced
6 C. Mesclun or lettuce of any kind
Vegetables (all or any combination)
2 C. cherry tomatoes, halved if you like
2 C. chopped asparagus, steamed but crisp
2 C. sugar snap peas or snow peas, steamed but crisp
1 1/2 C. cooked corn kernels
2 C. halved or quartered, steamed new potatoes
red or white radishes, endive, peas, cucumbers, etc., etc., etc.
Whisk together the dressing ingredients.
In a large salad bowl, combine whatever veggies you’ve decided upon. Pour on the dressing, and fold it gently into the salad. Serve at room temperature, or chill and serve cold.
