1 pound zucchini of choice, prefer larger size, cut into ¼ inched thick in lengthwise
¼ cup olive oil
Kosher salt and freshly ground pepper to taste
2 cup cherry tomatoes, cut into halves
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh mint leaves
2 cups organic mixed greens of choice
½ cup thinly shredded cheese of choice like Parmesan cheese, dry Jack
½ cup freshly toasted almond or walnut
½ cup fresh lime juice
1 tablespoon soy sauce
1 teaspoon fresh minced garlic
1 teaspoon fresh minced shallot
1 teaspoon fresh minced ginger
¼ cup finely chopped cilantro
1 teaspoon brown sugar
Preheat the griller to medium hot. In a medium bowl, combine the zucchini, olive oil, salt and pepper and coat well. Grilled each zucchini on both sides for 3-5 minutes or until lightly charred. Cooled and cut into thin match sticks.
Meanwhile, combine all the ingredients for the dressing in a small bowl and mixed well. Set aside.
Combine the cut zucchini, tomatoes, basil, mint and mixed greens with the prepared dressing and toss the cheese, almond or walnut on top. Serve immediately.
