Spring Fava Bean & Tomato Salad

Serves 4 to 6

Mei will be making this salad at the Windsor Farmers Market on Sunday, June 10, 2012. The Sparks Stage is our new Culinary Pavilion where culinary adventures will be presented for those that want to learn new and exciting recipes. Fava Beans are so wonderfully flavored, and who doesn't like summer tomatoes!! I sure want to try this one on Sunday ... hope you will too!

  • 1# Fava beans, shelled
  • 2 medium fresh tomatoes, small dice
  • 1 small yellow or white onion, small diced
  • 1 medium cucumber, seeded & diced
  • 2 cloves garlic, minced
  • 1/4 C. chopped parsley
  • juice of 1 lemon
  • 3 T. olive oil
  • 1/2 t. honey
  • 1 t. ground cumin
  • 1/4 C. aged cheese like Parmesan or Gruyere
  • salt & freshly ground pepper to taste
  • 1/4 C. fresh toasted pine-nuts (or almonds, walnuts, hazelnuts, cashews, etc.)

In a medium pot, bring 4 cups water to a boil and blanch the shelled Fava beans for 3-5 minutes, drain off the water.

In a salad bowl, combine the cooked Fava beans and the rest of the recipe ingredients. Gently toss the ingredients to evenly coat all of the ingredients. Serve immediately, or chill until ready to serve.
