Scechuan Broccoli

E. Marie Coakley

Serves 6

Try a spicy addition to the dinner table. You can add more, or less crushed red pepper to suit your own "hotness" tongue. This is a really pleasant alternative to just steamed broccoli ... and we all know how good it is for you.

  • 1 T. lite soy sauce
  • 1 T. rice or cider vinegar
  • 1/2 t. sugar
  • 1 T. sesame seeds
  • 2 t. veggie oil
  • 1/4 to 1/2 t. crushed red pepper
  • 1/2 t. peeled, minced ginger
  • 2 cloves garlic, minced
  • 5 cups coarsely chopped broccoli

Combine soy sauce, vinegar & sugar in small bowl, set aside. Heat large skillet or wok over medium heat. Add sesame seeds, cook 1 minute or until seeds are browned. Remove seeds, set aside. Add oil, pepper, ginger & garlic, stir fry 30 seconds. Add broccoli, stir fry 1 minute. Add soy sauce mixture, stir well. Cover and cook 2 minutes or until broccoli is crisp-tender. Sprinkle sesame seeds.
