Quick Apple Tart

Totally Apples Cookbook

Serves 6 to 8

This goes together so quickly ... great for drop in family or anytime you need a very quick dessert.

  • 1 C. flour
  • 1 t. plus 1/4 C. sugar
  • Pinch of salt
  • 6 T. cold butter, cut into slices
  • 2 T. cold water
  • 3 large Golden Delicious apples, peeled, cored and thinly sliced

In a food processor with metal blade, combine flour, teaspoon of sugar, and salt. Pulse to combine. Add butter, and pulse briefly just until mixture resembles coarse meal. Add the water, and pulse a few times until pastry holds together when pressed. Transfer to work surface, press into a disk, wrap in plastic. Chill for 1/2 hour or up to 2 days.

Preheat oven to 400 degrees F. Butter and flour a heavy baking or cooking sheet.

On a lightly floured board, roll out the dough to a 10-inch circle. Transfer to prepared sheet. Gently build up edges with your hands to shape a free-form crust. Brush off excess flour. Arrange apple slices in circular pattern over dough. Sprinkle with 1/4 cup sugar and bake 1 hour and 10 minutes, until crust is golden brown and apples are brown on edges. Cool, cut in wedges. Serve warm or cold.
