Sweet, creamy winter squash - don't you love it? These pumpkin pickles are spiced with cinnamon and cloves, but they don't taste like pumpkin pie - they are both sweet and sour. They really are a relish ... treat them like a relish ... serve them just like you would a relish! You can use them as a substitute for orange in any recipe!
2# pumpkin, peeled and cut into 1” cubes
1/3 C. sugar
1/2 of a cinnamon stick or 1/4 t. ground cinnamon
3 whole cloves
1/2 t. ground nutmeg
1 t. whole coriander
1/2 t. salt
1 C. water
1 C. white vinegar
Combine all ingredients EXCEPTPUMPKIN in a 1 quart pan. Place over high heat and bring to boil. Add pumpkin after mixture comes to a boil. Return all to a boil and cook for 1 additional minute. Remove pan from heat and pour contents into a one-quart jar. Allow to cool. Cover and refrigerate 1 week before using.
