Just a bit different from the traditional pumpkin pie. Kids sure love this one! Who doesn't love sweet potatoes with marshmallows ... this is so much like that!
9 crushed Ginger Snaps
1/4 C. broken, toasted pecans
2 T. flour
2 T. brown sugar
2 T. butter
Mix all together and sprinkle onto a raw pie crust in a 9” pie pan.
1# pumpkin, fresh cooked or canned
1 C. evaporated milk
1 T. pumpkin spice
1 T. fresh grated ginger (more or less to taste)
1 C. brown sugar
1/4 t. salt
Mix all ingredients thoroughly and pour over strussel. Bake at 425 degrees for 15 minutes. Reduce heat to 350 degrees and continue baking for 30-40 minutes until pumpkin is set. Cool. When ready to serve add mini marshmallows on top and slide under the broiler for about 30 seconds to brown. Serve & enjoy!
