Fillet of Sole with Orange-Soy Sauce
I hear about people that don't eat fish ... I don't happen to be one of them! I absolutely love the fish we get from Mike at the Farmers Market. Mostly, I'm a purest when it comes to fish ... however, once in awhile I enjoy this orange & soy sauce, it's so sweet and delicious. Try serving it with couscous and fresh asparagus from the market.

- 2 lbs sole fillets or any fillet of fish
Melt butter in saucepan; add orange juice, sugar, vinegar, sherry and orange zest. Blend cornstarch and soy sauce; add to sauce.
