Crock Pot - Chicken & Sausage Gumbo

You can make this dish as spicy as you like, it surely tastes good when the weather is cool, and it makes a wonderful dish for company! Cole slaw goes great with this dish.

Ingredients

  • 3/4 C flour
  • 1/2 lbs smoked sausage sliced
  • 3/4 lbs chicken breasts cooked & shredded
  • 1 C chopped onion
  • 1/2 C chopped green pepper
  • 1/2 C chopped celery
  • 8 water
  • 2 cloves garlic minced
  • 1 bay leaf
  • 1 1/2 t Cajun seasoning
  • 1 t salt
  • 1/4 t black pepper
  • 1/2 t dried thyme
  • 1 T Worcestershire sauce
  • dash of hot sauce
  • 3/4 C sliced green onions
  • 4 C hot cooked rice

Instructions

  1. Prepare chicken breasts & shred. Set aside. Brown sausage, onion, & green pepper in skillet. Drain fat. In Crock-Pot, combine chicken, sausage mixture, celery, water, & seasonings. Cover and cook on ow 6-8 hours or on High 3-4 hours. Serve over rice & garnish with green onions.
