I could eat the mushrooms from the market 5 days a week! Have you discovered them yet ... and there are a million recipes for mushrooms ... as we go along I will share some with you!
2 T. butter
1 small onion, finely chopped
2 cloves garlic, finely chopped
4 oz. of mushrooms (you choose the kind) wiped and chopped
2 small potatoes, peeled & freshly boiled, or microwaved till done
2 t. fresh parsley, chopped
1 t. whole -grain mustard or Dijon if you like it spicy
1/4 C. heavy cream
salt & white pepper to taste (or black, if you prefer)
Melt butter in a medium skillet and saute the onion & garlic over medium heat for about 5 minutes (until softened & golden). Add mushrooms and saute for 1 minute. Add potatoes and crush them with a fork until broken up. Stir in parsley, mustard and cream. Season to taste, cover & keep warm until ready to serve. Can be smooth or textured … your preference!
