Persimmon Cookies

These cookies are delicious, and a great treat during the Holidays. They freeze well, and they ship well.

  • 1/2 C. Butter
  • 1 C. sugar
  • 1 t. vanilla
  • 1 C. persimmon pulp with 1 t. baking soda added to the pulp
  • 1 beaten egg
  • 2 C. flour
  • 1/2 t. ground cinnamon
  • 1/2 t. fresh nutmeg
  • 1/2 t. ground cloves
  • 1 C. raisins
  • 1 C. chopped nuts

Cream butter, sugar & vanilla; add persimmon with baking soda; mix in the egg. Stir in the dry ingredients (flour, cinnamon, nutmeg, cloves, raisins & nuts). Lightly spray baking sheets with Pam; drop by teaspoonfuls and bake 12-15 mins. at 350 degrees. Cool on baking sheet for 5 mins. then transfer to racks to finish cooling. You can make a simple glaze too, if you like – powdered sugar, bit of butter, milk to make spreading or drizzling consistency.
