Persimmon Bread Pudding

1 loaf pan

So what do you do with persimmons? I make cookies (recipe on this website), and I also make Persimmon bread. Persimmon Bread Pudding is an elegant dish that will impress company.

Combine:

  • 1 C. brown sugar
  • 1 C. whole wheat flour
  • 1 1/2 t. baking soda
  • 2 t. ground cinnamon

Mix in blender:

  • 2 or 3 persimmons (pulp only)
  • 1/2 C. milk
  • 1 egg

Combine the wet & dry & add:

  • 1/2 C. raisins
  • 1/2 C. chopped nuts (your choice)

Pour into buttered and floured loaf pan. Bake at 350 degrees for 40 minutes, or until done.
