Pea Crostini

Every time I have made this, someone wants the recipe! It is light, tasty, and has that wonderful "fresh" flavor we all adore in fresh peas! I really like it on the Cocktail Rye bread!

  • 2-3 T. olive oil
  • 1 t. garlic, minced
  • 2 Leeks, finely chopped
  • 1/2 t. coarse salt – pepper to your taste (white or black)
    Saute the above ingredients in the olive oil, over low heat, until the leeks are soft.
  • 2 T. chicken stock
  • 2 cups fresh or frozen peas.
    Add the above, cover the pot and cook for 2-3 minutes. Slice and toast French Bread with olive oil.
  • 1 or 2 T. olive oil
    Add to mixture and process, pulse 12 times. Remove half of the mixture; mulch the rest with 1/4 C. chopped mint. Process together. Mound on toasts!
