I'm a good old Southern gal. There are some things you just remember from childhood, and for me, this is one of them! I can remember taking these sandwiches, on plain old white bread, to school for lunch. Of course I usually got an apple or an orange with it in my lunch box. I still love it ... and I surely hope there's homemade Pimento Cheese heaven! I also like it in the hollow of canned pears, on a piece of lettuce for a side salad! Enjoy!!!
12 oz. grated Cheddar cheese
2 four-ounce jars pimento, drained
1 C. mayonnaise
Place all ingredients in a food processor or blender & process until smooth.
The newer version adds: 1 small onion, grated – 2 Tablespoons Worcestershire sauce, and lots of freshly ground black pepper.
