Old-Fashioned Soft Pumpkin Cookies

Makes 3 dozen

Do you ever get tired of trying cookie recipes ... nope, me neither. There's always a new recipe on the horizon! And cookies are always a welcome gift, no matter who you share them with!

  • 2 1/2 C. flour
  • 1 t. baking powder
  • 1 t. baking soda
  • 1/2 t. salt
  • 1 t. ground cinnamon
  • 1/2 t. ground nutmeg
  • 1/2 C butter or margarine, softened
  • 1 1/2 C. sugar
  • 1 C. Pumpkin (canned or fresh cooked and mashed)
  • 1 egg
  • 1 t. vanilla

In medium bowl, combine flour, baking powder, baking soda, salt, cinnamon, & nutmeg; set aside. In large mixer bowl, cream butter & sugar. Add pumpkin, egg, and vanilla; beat until light & creamy. Add dry ingredients, mix well. Drop by rounded tablespoon onto greased cooking sheets. Smooth tops of cookies. Bake in preheated 350 degree oven for 15 to 20 mins., until lightly browned. Cool on wire racks.

GLAZE: In small bowl, combine 2 cups sifted powdered sugar, 3 tablespoons milk, 1 tablespoon melted butter, and 1 teaspoon vanilla. Blend until smooth – apply to cooled cookies.

ALSO ADDS: 1 cup raisins; 1 cup chopped nuts; 1 cup uncooked rolled oats; 1/2 cup crushed pineapple (drained); 1/2 cup brickle bits … or any combination of these ingredients.
