This is another one of those things that takes a bit of prep work, and you feel so accomplished when your finished - and with today's processors, it's a snap. Things like this are so great to share with friends, especially friends that work long hours and don't have the time to do this! You will be a hero!
2 medium sized cabbage
4 sweet peppers (green, red or yellow)
4-6 carrots, medium size
6 large onions
1/4 C. salt
3 C. sugar
3 C. cider or white vinegar
1 t. mustard seed
1 t. celery seed
Chop fine, or grind all of the vegetables; sprinkle the salt over the vegetables and set aside for 2 hours; drain well.
Combine the sugar, vinegar, mustard seed and celery seed and mix all well with the vegetables. Fridge and allow 2 or 3 days for the flavors to blend (I like it when it’s fresh, as well). Share with friends or seal in jars (your choice). Delicious with any kind of meat.
