Buy the mini-zucchini, or very small zucchini and cook them whole. I really enjoy lemon juice ... then one day I tried zucchini with lime juice ... WOW! I am converted! I have even used bottled lime juice, and it's still delicious! Light, refreshing, and you can certainly eat a bunch of it ... maybe you should double the recipe, like I do!!!
16 mini-zucchini – whole
2 T. water
3 T. butter
3 T. lime juice
Place the zucchini and water in a 1-quart casserole. Cover. Microwave on high 2-3 minutes, until just crisp, stirring after 1 minute. Drain.
Put butter in a small container. Microwave on high 30 seconds, until melted. Stir in the lime juice and pour over the zucchini – toss lightly. Eat to your heart’s content!
