Quick, satisfying, and majorly tasty! The fastest lunch you'll ever make; or for that late night snack before bed. It can also be served in the winter as a first course for a full dinner meal. You may or may not want to use the ramen noodle seasoning packet ... it's fairly salty ... or try using just half of it.
1# bok choy, white portion cut into 2” julienne strips, green tops cut into 1/4” strips
4 C. chicken broth or stock
1 – 3 oz. package of ramen noodles, with or without the seasoning packet
1/2 C. small shrimp (about 4 ounces)
2 green onions, white portion and first 2 or 3” of the green
Put white portion of the bok choy and the broth in a 2-quart casserole. Cover. Microwave on high 10-12 minutes, until broth boils, stirring once.
Drop in noodles (broken if you like). Cover. Microwave on high 2 minutes, stirring once to break up noodles.
Add shrimp and bok choy green tops. Microwave on high 1-2 minutes, until shrimp are just pink and greens wilt. Serve sprinkled with the green onions.
