Green beans with a twist ... the apple juice and ginger give them such a new taste. It's a great little dish to take to a pot luck, most folks would never think of putting these ingredients to the taste test. A delightful change of pace for green beans.
1/2# ground pork
1# green beans, chopped into 1/4” pieces
1/2 C. apple juice
1 t. ginger, freshly grated
2 T. soy sauce
1 t. sesame oil
1/4 t. salt
1 T. cornstarch dissolved in 1 T. water
1 C. raw shrimp, chopped – small shrimp work great
Put pork in a 2-quart casserole. Cover. Microwave on high 2 minutes, until fat starts to come out. Stir in beans. Cover. Microwave on high 5-7 minutes, until pork turns from pink to grey and beans are almost tender. Let stand, covered, 2 minutes. Drain.
Add apple juice, ginger, soy sauce, sesame oil, salt and cornstarch mixture to beans. Microwave on high 3-4 minutes, until sauce boils and thickens, stirring twice. Stir in shrimp. Microwave on high 1-2 minutes, until shrimp turn pink. Take care not to overcook shrimp, or they will be tough and chewy.
