Another way to use the stems of broccoli. Such a great dish, quick, easy and makes wonderful use of your microwave! Serve with refried beans and a lettuce wedge salad with bottled dressing ... very quick & easy!
1 T. fresh lemon juice
1 T. olive oil
1/8 t. cayenne
1/2# boneless, skinned chicken breast – or dark meat if you prefer
1 C. broccoli stems (from one bunch of broccoli, lightly peeled & julienned
1/2 t. salt
1/4 C. water
8 – 8” flour tortillas
1 C. chopped tomatoes
1 green onion, chopped – white and green
3/4 C. salsa
1/4 C. cilantro, chopped
Mix lemon juice, oil, and cayenne in small bowl. Turn chicken several times in lemon marinade and let sit in bowl 5 minutes while you peel and chop veggies.
Put broccoli, salt, and water in 1-quart casserole. Cover. Microwave on high 2 minutes, until no longer pink, turning half way through cooking. Cut into thin strips.
Put tortillas between damp paper towels. Microwave on high 30 seconds to 1 minute, until warm. Fill center of each tortilla evenly with chicken, broccoli, tomatoes, onions, and salsa. Sprinkle with cilantro. Fold over bottom of tortilla, then sides, roll.
