This is a way to use the stems of Bok Choy when you have cut off the greens to cook with bacon. This is a delightful, healthy salad, and the peanuts add a wonderful crunch. This salad is great served with parchment cooked fish ... all done in the microwave.
1 1/2# Bok Choy, white portion only, cut into 1/4 inch diagonal slices
1/4 C. water
1/2 C. buttermilk
1/2 C. sour cream
4 T. roasted peanuts, chopped
Put bok choy and water in a 2-quart casserole. Cover. Microwave on high 4-6 minutes, until just tender, stirring twice. Let stand 3 minutes, then drain.
In a small bowl, mix buttermilk and sour cream. Microwave on high 20-30 seconds to warm, taking care not to let it boil. Pour over bok choy. Sprinkle with peanuts. and serve.
