A super dessert ... and a great gift when those lemons are ripe!
2 C. sifted flour
1/2 C. sifted powdered sugar
1 C. butter, cut into pieces
1/4 C. flour
1/2 t. baking powder
2 C. sugar
1/2 C. fresh lemon juice – and the zest if you like them tangy
Preheat oven to 350 degrees.
Re-sift 2 cups flour with powdered sugar into medium bowl. Add butter & mix thoroughly. Pat dough evenly into bottom of 9×13 baking dish. Bake until golden, 20/25 minutes.
Sift remaining flour with baking powder into small bowl. Combine remaining ingredients in medium bowl and beat well. Gradually add flour, blending thoroughly. Pour over crust (need not be cooled), spreading to edges. Continue baking until set, about 25 additional minutes. Let cool before cutting.
