This sauce is so good with pork. It also makes a great appetizer for dipping anything into ... sweet from the beets, sour from the sour cream, and a bit of a bite from the horseradish. It's wonderful drizzled over celery ... and try it on baked potatoes! YUMMY!
3 small raw beets, peeled & finely grated
1 C. freshly grated horseradish, more or less to your taste
1/4 C. sour cream
1/4 C. heavy cream, whipped
Fold together all of the ingredients; chill and serve.
