Honey Sweet Potato Biscuits

Sweetened With Hone the Natural Way

Makes 10 biscuits

These biscuits are so flavorful ... you'll want them with chicken, pork, beef, pasta, salad ... you name it, you'll want them! They are best piping hot with lots of butter. By the way ... do you zest all of your lemon peels and your orange peels and freeze them in little snack baggies? I do ... just incorporate a couple of drops of oil and juice, then seal them tightly in Saran - then drop the Saran packet into a snack baggie. It works great when you need citrus peel for a recipe!

  • 2 C. flour
  • 1 T. baking powder
  • 1/2 t. salt
  • 1/4 C. veggie shortening
  • 1 T. grated orange peel
  • 1 T. grated lemon peel
  • 1/4 C mashed cooked sweet potatoes (l large, baked, peeled & mashed)
  • 1/3 C. honey
  • 1/2 C. milk (about)

Preheat oven to 400 degrees.

Combine flour, baking powder and salt in large bowl. Cut in shortening until mixture resembles size of small peas. Add orange and lemon peels, sweet potato and honey; mix well. Add enough milk to make soft, but not sticky, dough. Knead 3 or 4 times on lightly floured surface. Pat dough to 1” thickness and cut into 2-1/4” rounds. Place on ungreased baking sheet.

Bake for 15-18 minutes or until lightly browned. Serve piping hot right out of the oven.
