Makes 20 large cookies
I have not yet tried this recipe ... although it looks very interesting. I like pumpkin and perhaps I will get to this recipe sometime during this Holiday season! What could be bad, butter, brown sugar, oats, pumpkin, walnuts and raisins! My kind of cookie.
2 C. flour
1-1/3 C. quick or old-fashioned oats
1 t. baking soda
1 t. ground cinnamon
1/2 t. salt
1 C. butter
1 C. sugar
1 C. packed brown sugar
1 C. prepared pumpkin
1 large egg
1 t. vanilla extract
3/4 C. chopped walnuts
3/4 C. raisins (cranberries would also be good!)
Preheat oven to 350 degrees. Grease baking sheets.
Combine flour, oats, baking soda, cinnamon and salt in medium bowl. Beat butter, granulated sugar and brown sugar in large mixer bowl until light and fluffy. Add pumpkin, egg and vanilla; mix well. Add flour mixture, mix well. Stir in walnuts and raisins. Drop 1/4 cup of dough onto prepared baking sheet; spread to 3” circle or oval. Repeat with remaining dough.
Bake for 14-16 minutes or until cookies are firm and lightly browned. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Decorate as desired with icing, chocolate morsels, candies, raisins or nuts. Or serve them as-is.
