Grandma Lena's Christmas Fruit Salad

This was on our Thanksgiving and Christmas table every year when I was a kid! I loved it then, I love it now! How can something taste so great and still be good for you? It goes with whatever kind of critter you're serving!

  • 2 whole eggs, well beaten
  • 6 heaping T. sugar
  • 3 T. flour, mixed into the sugar
  • 1 lemon, juiced – and some of the zest if you like (optional)

Mix all together and add 1 1/2 cups of the pineapple juice (if not enough juice, add remaining part water). Cook in double boiler until thick, cool and mix with fruit – saving enough to spread over top.

  • 3 large eating apples, cut into 1/2” chunks, unpeeled
  • 2 large bananas, sliced and diced
  • 1 large bunch of seedless red table grapes, halved
  • 1 can of pineapple spears or rings, cut into small slices, juice drained & saved
  • 1 handful of dried cranberries (optional)
  • 1 can of Mandarin Oranges, drained (optional)

Place fruits in a large bowl, mix most of the dressing into the fruit – saving enough to spread a thin layer over the top. Saran wrap the top of the bowl and keep chilled until ready to serve. Just before serving, add chopped peanuts over the dressing on top, and decorate with maraschino cherries and Mandarin Oranges. Serve & enjoy!
