This recipe comes from Glenda Castelli, the manager of the Windsor Farmers Market. I know she really loves this one, and uses it often.
Best to leave all vegetables in chunks. Combine all in large kettle and simmer at least 4 hours. Seal in hot, clean jars with hot lids. No oil! Can be frozen if you like.
