Good Farmers Market Chili Sauce

52 jars - one for each week of the year.

This recipe comes from Glenda Castelli, the manager of the Windsor Farmers Market. I know she really loves this one, and uses it often.

  • 1 box tomatoes (20#) peeled & chopped
  • 2 Bell peppers, diced
  • 2 large onions, chopped
  • 5 hot chili peppers, seeded & chopped
  • 1 full head of garlic, peeled & finely chopped
  • 1 bunch parsley, chopped
  • 3 large T. sweet basil, chopped (fresh is best)
  • 1/2 C. celery, chopped
  • 1/4 C each – salt, sugar, vinegar

Best to leave all vegetables in chunks. Combine all in large kettle and simmer at least 4 hours. Seal in hot, clean jars with hot lids. No oil! Can be frozen if you like.
