Pork shoulder is a truly great meat ... tasty, tender, juice, economical! This makes little meat balls that are delicious and very reminiscent of Carnitas. Serve them with toothpicks! You will find a hundred ways to use these lovelies! Try them on a green salad, or tossed with fresh melon. They are great just served plain ... or serve with any condiment(s) you like.

Use as much meat as you like, depending on whether you’re serving it as an appetizer or as part of a meal.
Cut the pork shoulder into small, even cubes; sprinkle with salt & pepper.
Cook on a baking sheet in a preheated oven set at 200 degrees. Leave room between the pieces so they get nice and crispy (don’t crowd the meat). Cook until the cubes are crisp – 1 1/2 hours to 2 hours.
