Apples are so very versatile ... and a really good apple cake is hard to find. This one is very easy and tasty, and I know you will like it! I like to add a bit of lemon juice and grated lemon peel ... and at Christmas time I add a rounded teaspoon of Cardamom. It's such a basic recipe you can add most anything that you like!
1 C. flour
1 C. sugar
1 t. salt
1 t. soda
1 well beaten egg
5 or 6 large apples, peeled & sliced thin
1 C. nuts
Sift the dry ingredients together; add the egg and mix thoroughly. Stir in the sliced apples and stir until a syrup forms; add whatever nuts you like, filberts are great! Pour into a 9” x 13” buttered casserole dish. Bake 375 degrees for 30 minutes or until the apples are tender and the cake springs back. No icing needed … however, you can glaze with a powdered sugar, butter, lemon juice glaze if you like.
