Crock Pot - Stewed Fruit & Dumplings

Serves 4

This is so easy, and so tasty. A great way to use up fruit that is just past it's prime!

  • 2-3 pints of fresh or frozen fruit – strawberries, raspberries, peaches, etc.
  • 1/2 C. + 2 T. sugar
  • 1/2 C. warm water
  • 2 T. quick-cooking tapioca
  • 2 C. flour
  • 2 1/2 t. baking powder
  • 1/2 t. salt
  • 5 T. butter, cut into small cubes
  • 1/2 C. milk
  • 1 egg
  • 2 T. brown sugar

In the Crock-Pot combine the fruit, 1/2 cup sugar, water, & tapioca. Cover and cook on Low for 5-6 hours or on High for 2 1/2-3 hours, or until the fruit has formed a thick sauce.

Combine flour, 2 tablespoons sugar, baking powder, & salt. Use a pastry blender or2 knives to cut in the butter until the mixture looks like coarse meal. In another small bowl, stir together the milk & egg. Pour into the flour mixture and stir until a soft dough forms.

Turn Crock-Pot on High – drop the dough by teaspoonfuls on top of the fruit. Cover & cook 30 minutes to 1 hour, until a toothpick inserted into the dumplings comes out clean. Sprinkle with brown sugar. Serve warm.
