I call these my Gringo Carnitas, for those that are not able to eat some of the hotter varieties. When you make this, everyone can eat it (even the kids) ... and those that like "hot" can add either peppers or sauce to brighten up their taste buds. Pork shoulder is perfect for this dish, however, you could use beef or chicken just as easily.
2# pork shoulder, cut into 1” cubes
20 oz. of frozen French style green beans – or the same amount of fresh, sliced
1 medium onion, diced
1 small can pimientos, chopped
4-6 cloves garlic, crushed
salt & pepper to taste
Place green beans in Crock-Pot with onion, pimiento, salt & pepper; add the cubed pork. Cover & cook on Low for 7-9 hours.
