Chicken Liver & Egg Salad

I don't know how chicken livers got such a bad reputation. Yes, they are unusual in taste - I guess I have developed a taste for them, and maybe you will too. This salad can be served on salad greens ... you can also use this mixture as an appetizer on crackers or bagette slices.

  • 3 onions, minced
  • salad oil
  • 1/2# chicken livers
  • 4 hard boiled eggs, chopped
  • 2 ribs celery, minced
  • salt & pepper to taste

Brown the onions lightly in 3 tablespoons oil. Remove from pan and reserve drippings. Cook chicken livers in the oil. drain and chop; add eggs, celery & onions. Season with salt & pepper; moisten with reserved onion drippings. Serve on lettuce, or on bread, or crackers.
