Did you know that when you combine a vitamin C rich fruit with spinach it unlocks some of the iron in the greens??? Isn't it great that we can eat the things we love and it's super healthy for us! Greens and cherries were made for each other. When you cook greens, serve some halved, pitted, fresh cherries on the side ... you will benefit in every way possible.
4 C. spinach, stems removed, washed and shredded
1/2 C. (more or less) halved & pitted cherries
1 red onion, sliced
1/3 C. feta cheese, crumbled
1/4 C. low-fat raspberry vinaigrette
Toss all of the ingredients in a bowl – divide between the 2 plates – enjoy!
