If you haven't tried cauliflower with cheese, here's a really good recipe - and so very easy - a food processor makes short order of grating cheese. This dish goes so well with chicken or fish.
1 head cauliflower
4 tomatoes, cut into wedges
3 C. shredded Monterey Jack cheese
1 T. melted butter
1/3 C. grated Parmesan
Sprinkle of Nutmeg
Preheat oven to 375 degrees.
Cut up cauliflower and steam until tender. Place in bottom of baking dish. Arrange tomato wedges on cauliflower. Sprinkle melted butter over cauliflower, then cheeses, and finally with nutmeg. Bake until cheese is melted and bubbly, about 15 minutes.
