I have to admit, carrots are not my favorite veggie, however - there are a few carrot recipes that I truly enjoy - and this is one of them. Give it a try. Carrots are so good for you.
Pam for spraying the dish
2 T. butter
4 C. thinly sliced carrots (about 1 1/2#)
2 T. minced green onion
2 T. flour
1 T. chopped fresh parsley
salt and freshly ground pepper to taste
1 C. milk
1 C. shredded Colby and Monterey Jack cheese, blended
1 C. crushed potato chips
Preheat the oven to 350 degrees. Spray a 9” baking dish.
In a large skillet, melt the butter over medium heat. Add the carrots and green onions and cook for 6 minutes, stirring occasionally.
Stir in flour, parsley, salt & pepper and cook for 2 minutes, stirring occasionally. Add milk and cook until thickened, 2-3 minutes. Stir in the cheese. Spoon mixture into prepared baking dish. Top with chips. Bake until hot and bubbly, about 30 minutes.
