I am one of those people that just LOVES beets and will try any recipe I find for them. This recipe is so good and simple and can be whipped up in no time. Great appetizer or side dish - and as a luncheon special.
3 medium beets, cooked (I like them roasted in foil)
1/4 C. chopped green onions
1 t. mustard, more or less – and any kind you like
1/2 C. sour cream
freshly ground black pepper
2or 3 drops of Tabasco
1 t. lemon juice
Cut the beets in matchsticks, or chop coarsely. Add the green onions; mix in the remaining ingredients & stir to blend. Chill. Serve on chilled plates with toast!
