Apple Candy

When my mother was alive, I visited her in Washington state many times. Washington sells candy products called "Applets" and "Cotlets" - square pieces rolled in powdered sugar ... they were always one of the things I brought home with me. This recipe is very reminiscent of those memorable candies ... I hope you will try it! You can do the same thing with apricots!

3 T. plain gelatin

  • 1/2 C. cold applesauce, strained (preferably home made)
  • 3/4 C. hot applesauce, strained (preferably home made)
  • 2 C. sugar
  • 1 C. chopped nuts (your choice)
  • 1 T. vanilla extract

Soak the gelatin in the cold applesauce for 10 minutes; combine the hot applesauce with the sugar and boil 10 minutes; add gelatin mixture and simmer 15 minutes longer, stirring constantly. Remove from heat, add nuts and vanilla. Pour into lightly buttered 9” x 9” pan and let set overnight. Cut in squares and roll in powdered sugar.
